Tomato ~ Basil Tart

   June 1st I left for a four week holiday to see daughters and grandchildren. We returned home Sunday evening, June 29th. By mid~morning Tuesday, everything needing laundered was done and the rest was unpacked and all put away, house was vacuumed, mopped, dusted, bathroom cleaned and kitchen surfaces and appliances wiped down, the needed mowing was done while gone and now the needed tidying in the yard was done, all of the lawn furniture has been cleaned, the mail had been gone through and a quick catching up of email was accomplished. Sigh.... then it was on to the rest of this wonderful summer. First thing was to assemble and bake a Tomato ~ Basil Tart.

   Before leaving I planted some flower seeds, flowers and herbs. When we returned home one variety of the flowers, and the basil and lavender were truly flourishing. In my last post I promised that this one would have a recipe for a savory pie I made from one of my favorite cookbooks in my personal collection by Phylliss Pellman Good, Favorite Recipes With Herbs. Here it is using some of that wonderful basil.

   Tomato ~ Basil Tart

I wish you could smell the lovely fragrance that was coming from those warm sun drenched leaves.

Simple and few ingredients. Yes, I am using a store bought pie crust. I had been gone a month, back a day and a half, ‘nuff said.

I pat the tomatoes with paper towel and then give them plenty of time to dry. You want them as dry as possible.

Basil cleaned, dried off and ready to chop with the garlic.

The cheese melts quickly and nicely in the hot crust.

Add the tomatoes.

Distribute chopped basil and garlic.

Evenly spoon and spread cheese mixture on top. 

Protect crust.... and to the oven!

Golden and Bubbly!

Can be eaten warm, but it must cool some to slice properly and not burn your mouth. I also really enjoy this cold.
 
   Please forgive me for not getting a piccie of the served tart. We were ready to eat and I did not want to hold things up grabbing my phone to snap one. I thought for sure there would be leftovers for that later. Wrong. Mental note, in the future, snap piccie then eat. This recipe is very good. For me it isn't Thanksgiving without Dad's Stuffing, Christmas without my Danish Kringle, spring without Strawberry Shortcake, or summer without this Tomato ~ Basil Tart. I hope you will try it. The recipe.


Tomato~Basil Tart

Makes 8 appetizer servings or 4 main dish servings.

9" pie crust
1  1/2 cups shredded Mozzarella cheese
4  medium-sized tomatoes
1  cup loosely packed basil leaves (1/3 cup dried)
4  cloves garlic
1/2  cup mayonnaise
1/4  cup grated Parmesan cheese
1/8  tsp ground white pepper
Fresh basil leaves for garnish
  1. Bake pie crust. Remove from oven Sprinkle with 1/2 cup Mozzarella cheese. cool on wire rack.
  2. Dice tomatoes. Drain on paper towels. Arrange tomato chunks on melted cheese in baked shell.
  3. Combine basil and garlic in food processor. Cover and process until chopped. Sprinkle over tomatoes.
  4. Mix together remaining Mozzarella cheese, mayonnaise, Parmesan cheese and white pepper. Spoon cheese mixture over basil mixture, covering evenly.
  5. Bake at 375° for 35 to 40 minutes, or until top is golden and bubbly. Garnish with fresh basil. Serve warm.

   Before I left for my wonderful time with family, I began reading the book, Crash the Chatterbox. I mentioned that here. On the first page of the Introduction, I wanted to grab my highlighter and start capturing significant points the author was making. That urge continued throughout the first chapter. I went to the library to see if an extended due date was a service they offered. It is and they extended the date to a few days past my expected arrival home. My daughter is buying books from a list of "to read books before high school" for two of her children. I wanted to check Barnes & Noble for Crash the Chatterbox, and possibly the author's book that preempted it, Greater, to purchase both if possible. She wanted new books for the kids. Barnes & Noble, and lunch at Chipotle Mexican Grill became our Sunday afternoon. There was one copy of each book I was hoping to find! I bought both. I then chose to stop reading Crash the Chatterbox and read them in order, Greater first. So far I am enjoying these books and may share more about them later.





   Of course lingering in the bargain books area at the front of any Barnes & Noble is my common practice. I mean after all, one has to go right through there to check out. :-) I have plenty of a variety of cookbooks, and of course the internet is a wealth of excellent recipes. I have to say, I have become very prudent and exercise tremendous self control when it comes to purchasing cookbooks.



   This gem had me the moment I saw that scrumptiously titillating Beef & Stout Pie on the cover. Dang photographer and printer... geez. This book was $9.99 and a great find at twice the price. Cookbook purchasing moratorium or not, I happily purchased it, and carried it home with glee. I just love reading the recipes, and the photos are lovely. I am very certain you will see some of the recipes I make from its pages. In fact, the Dublin Coddle on page 68 has been speaking to me. I am about to answer. :-)

  In the meantime, out at the garden, the sage and parsley are really doing well and I need to clip some of both. I am going to do just that and make the Sage Beer Bread on page 72 of the Favorite Recipes With Herbs Cookbook. Who knows? I may just make it to serve with the Dublin Coddle instead of the traditional Soda Bread.

Embrace who God created YOU to be!!!

   I have never done a post that the whole purpose was to send you to a blog post of another blogger. I am very excited to tell you that is exactly what this post is meant to do. My mother died with the music in her, literally. Graveyards are so full of potential that could have been a blessing to others, and beautiful life for the one now gone. I determined years ago I would not let that be the case with me. However, though I have gone back to school and done well, I essentially am doing just that. The woman that penned this article also recommended people read Crash the Chatterbox, written by Steven Furtick. I have that book and am reading it. So far it is a great read, and I suspect will prove to be life changing for me personally.

   This article I am sharing with you here is the most practical and encouraging reading I have done in, well,  I can not remember how long. The points this author shares from her heart need to be applied to our lives. God created each of us with specific gifts, talents and purpose. We are each unique and need to follow the Holy Spirit in how we live of lives. We need to know what our gifts, talents and purpose are, and operate in them, and do so unapologetically. I can not preach that sermon because I am on a journey to discover those things. That journey is causing me to break those rigid molds that have constrained me. Crash the Chatterbox is helping me with that! The blog post I share with you here is not about that book, but it dovetails so I shared it with you.

My Christmas Novel Pick This Year

   Although I have read fiction books written by male authors I tend to read primarily female authors. When I bought this year's fiction Christmas book I assumed the author was a woman. The author's name is T. Davis Bunn. That is how the name appears on the book jacket. T. Davis Bunn is a prolific male author. Who knew? Having written under the pen name Thomas Locke, I am guessing the T. may be for Thomas.... and not say... Tamara, Tracy, Tina or Teresa...... :-)  I believe he is now writing simply under, Davis Bunn. He has apparently written a number of historical fiction and legal thriller books. I am not so over the top for a "thriller" but I do enjoy legally plotted fiction and historical fiction. While this book takes place in current time, it revolves around the ending of World War II in, England. Those of you that know me know WWII from the British, particularly English, side is a topic of great interest to me.
   My pick this year for favorite Christmas fiction story is not a novella but a full length novel. I highly recommend this treasure and waiting for Christmas to read it is not necessary. The story revolves around a current Christmas and a Christmas gone by decades ago while hope, joy, giving of ourselves to others and love are at the heart of this story. The true meaning of Christmas is portrayed in this well written story but it could be enjoyed anytime. My pick this year is Tidings of Comfort & Joy, by T. Davis Bunn.


   Charles Dickens once said, "I will honour Christmas in my heart, and try to keep it all the year." Giving gifts, appreciating and fellowshipping with and loving family and friends, looking back on good memories and blessings, having hope and great expectations for the future, singing songs of joy, even eating and enjoying the abundance we so easily take for granted are all a part of Christmas, and the Christmas season. While we may not experience those wonderful things in such a way throughout the year, we can experience the constant, unconditional and endless love of God and the Savior He sent that first “Christmas” morning. We can walk in the excitement, anticipation, hope, joy and love we celebrate at Christmas everyday of the year. That great, unmatchable Gift God gave us in His Son was intended to restore to mankind everything we lost in, Adam ~ once and for all that would receive His Gift. The promises and Covenant God gave man are shown at length throughout the Old Testament where the promises are made and the New Testament where they are established. If we choose to accept this gift from God we can enjoy forgiveness and right standing with God, eternal life with Him forever, and a life here on earth full of satisfaction, abundance of health, peace, protection, provision and prosperity in all areas of our life.  When the Christmas "season" comes we will truly have something to sing about, something to proclaim!

Birthdays, Memories and Jesus!

   I have several grandchildren and the other day one of my grandsons called to say he hoped we were getting together for Christmas because it just would not be the same without me. How do you say HOTWIRE? Last summer I spent time with my daughter and her family. I was able to spend quality time with each of the children. At the end of my stay there my son~in~law thought it might be nice to go to the beach. Such good memories! I spent a day at the beach with this grandson. He, his sisters and I created a magical sand castle.

His birthday was a few weeks later. He, his mom, dad and sisters went on a Disney cruise with plenty of Caribbean sandy beach ports of call. I felt inspired to design and create this birthday card for him.


I loved creating a card that featured him framed as a piece of God's special artwork.




His birthday was the day on the cruise they were at Grand Caymen.

I love dolphins. I still have my Scholastic book on them from the Scholastic Book Club I bought in 1st or 2nd grade.

This is on my Bucket List.

He said the turtles at Grand Caymen Turtle Farm were his favorite thing. Some of them were as big as 500 pounds.


And there I was thinking the Queen of England was the only one with two grand birthday cakes with celebrations to follow.  See below at dinner.

I made this for him when he was much younger. Given the way he celebrated his birthday perhaps an updated rendition of this card would have been more appropriate.



One of my favorite books.


   Just like birthdays of friends and family, we celebrate a very special birthday at Christmas. Christmas is when we celebrate the birthday of, Jesus. That is why it is such a wonderful time of the year. Yes, I am humming it. I am excited. Just like our earthy family and friends birthdays we are excited, we plan for this big birthday, we celebrate, have great food, a time of fellowship, have parties, give gifts, send cards, sing, and make precious and priceless memories.

   Jesus is the best gift ever and always will be. He is so precious to me and His love and being Lord of my life can never have a price tag on it, He paid it all for me. He paid it for everyone that will receive the precious gift of His love. I think of this everyday of the year, but this time of the year we celebrate it! Oh, deer!

   Earlier this week I grabbed my camera and set out for a section of a park and reservation area very close to my home. This park system covers a vast area of about 500 square miles I think. There are lakes, rivers, creeks, water falls, an array of beautiful wildlife, a zoo, and right now in particular there are trees with such splendid colors. I thought I would get some photos of the trees in the morning and then go out again in the afternoon and take photos of the same trees in afternoon light. It sounded like a great idea to me. I was however stopped in my tracks when I saw what you will see below in this first set of photos. I decided to spend my time in that morning sun just down the street from my house. We see deer often. I was just so taken by these. On the whole of our street there is only one real garden of sorts in a front yard. This garden was pretty this summer. It is just down from my house, and the deer love to stop there.

   Later that afternoon I sort of stayed with my original plan. I grabbed my camera and headed for the wood nearby. It all came together quite nicely because I started out to take piccies of the sun on the leaves in the early morning in comparison to the sun on the leaves in the late afternoon. I got to see lovely deer in the morning and in the afternoon I came across this beautiful buck.

Do you know how magnificently your Creator created you?

We are not through here. I fully intend to follow you deeper into this wood.



His antler's blend like branches. He completely blends in at a distance. God protects, period.



So regal.


  I could have spent the whole of the afternoon into evening in that wood with that buck. However, things at home needed tending to. As I was posting this it occurred to me that I had no real purpose for this post except to share the photos of those lovely creatures. I never get tired of seeing them. And then it occurred to me there is a book I have been meaning to share with you, and this is just the post for it. So I ran up to my bedroom, took it out of my bedside table and took this photo of it. 



   That is the hard copy of Hinds' Feet on High Places my husband gave me for Christmas, in 1996. My original paperback copy proudly displayed the love shown to her with much fraying of pages and falling apart in general. I loved opening this that year. 
   Since elementary school I have battled a fear. This fear would be triggered by a certain environment and was paralyzing, emotionally and physically. Sometimes, often, my physical response would be flight. Initially I would be unable to move, sometimes not breath, but then would be in high flight mode. This fear still tries to dominate and destroy me. I sought counseling, and still...fear. After decades of hell, and I choose that word rightly, I realized it was a spiritual matter. Only God was my answer. In the last couple of years I have made the issue a matter of conversation between God and I. The Holy Spirit has shown me things and through my time in the Word of God and time fellowshipping with God, I have learned some things. Life changing things. I have pressed in, become more honest and transparent and real in my time with God. My relationship with Him is stronger than ever and so my trust and faith have grown deeper. I have gone higher with God that I ever knew possible. As I have grown and changed in my heart, my life has changed and fear no longer has its devastating and debilitating grip on me. I can do stupid stuff to usher fear right back in, but I have no desire to do so whatsoever. That which got me into such a bondage of fear was really innocent on the part of this young elementary school girl. A girl who believed a Girl Scout leader. It was not until a Sunday School teacher took the time to ask me about a comment I made in her class that I was shown how deceived I was. I love the story of David and Nathan where the instant David's eyes are opened he repents. He loved God and when shown the error of his way, he changed. That is what repentance does. When I saw what Mrs. Mucci was saying to me was true; I immediately stopped doing what I was doing. I loved Jesus so much as a kid that when I saw this deception for what it really was that I was grieved ~ deeply. It was nothing to walk away and never look back once I saw and understood the truth. However, I would battle the effects of that for decades to come.
   When first I read Hinds' Feet on High Places by Hannah Hurnard, I was in my twenties. I could not put this book down because I so related to the main character, Much Afraid. When she was in her paralyzed mode, and when she wanted to run, I could vicariously felt her fear so deeply I felt my own heart beat speed up, and at that moment in time I would forget I was reading a book. The ending was so beautiful and gave me hope. That is why I read it so many times. I was looking to be free of that fear. I have not read this book for some time because I have grown in the knowledge of Who God is and how deeply and unconditionally He loves me. I may read it again someday. I do keep it in my night table by my bed. If I do, it will only be to see how marvelous God is and to remind me from where He redeemed me from. Though a good book, it is not the Word of God. God's Word and developing our relationship with Him is where our deliverance comes. 
   This brilliantly woven allegory is about the matchless, unconditional and everlasting love of God toward us, and the frustration, destructive crippling and the futility of living in the faithless state of fear. I have lost count of the times I have read it, but my first go round with it was in the early 1980’s ~ it has never lost its beauty for me.

The Lord God is my strength,

   I really do not want to put this on here, but must. Though I do recommend Hind's Feet on High Places by Hannah Hurnard, I do not recommend her other writings. I praise God for this book as I believe He inspired her to pen it. Her other works do not align with scripture and some vary off considerably. Please check here for a really well written and though brief a quite good biography of Hannah Hurnard. You will need to click on the bright pink book that says "Look Inside" and then scroll down a few pages to where it will read "Author Biography". The brief biography will begin there.
